Camping Recipe: Cast-Iron Pad Thai

Ingredients

  • 7 oz Pad Thai noodles
  • 2 tbsp sesame oil
  • 1 large chicken breast
  • 1 small onion
  • ¼ tsp salt
  • 2 eggs, beaten
  • ⅔ c. Pad Thai sauce, recipe below
  • 6 green onions
  • 1 bunch of cilantro
  • ¼ cup chopped peanuts
  • 1 lime
  • Bean sprouts for topping

Pad Thai Sauce

  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp lime juice
  • 2 tbsp brown sugar
  • 1 tablespoon chili-garlic sauce or Sriracha
  • 1 tablespoon fish sauce

Instructions:

  1. Combine all the ingredients for the sauce in a resealable bottle and shake to combine. Set aside and allow the ingredients to marry.
  2. Wash and dry all of your produce and herbs.
  3. Carefully dice the onion and slice the green onions thinly until you have about a half a cup, separate the whites from the greens. Then chop the cilantro; you’llneed about 1/4 cup.
  4. Cut the chicken breast into bite-size cubes.
  5. Start by building a strong fire and setting a pot on to boil. Once the water is boiling, remove it from the heat and submerge the pad Thai noodles. They will need to soak for 8 to 10 minutes.
  6. While the noodles are soaking, heat a drizzle of sesame oil in a skillet over the fire. Once the oil is hot enough to pop, when sprinkled with water, toss in the chicken, chopped onions, green onion whites, and season with a pinch of salt.
  7. Sauté the chicken until cooked through, and the onions are translucent and beginning to brown.
  8. Next, move the chicken and onions to one side and crack the eggs into the skillet. Cook until scrambled, stirring frequently.
  9. When the noodles are cooked through and al dente, use tongs to remove the noodles from the water and add them to the skillet.
  10. Move the chicken to one side of the pan, lower the heat, then add the eggs to the skillet, stirring them frequently to scramble.
  11. When the noodles are done soaking, remove them from the pot with tongs and add to the skillet along with the eggs, chicken, and onions.
  12. Dump the Pad Thai sauce over the top of the noodles and stir to cook thoroughly.
  13. Serve hot and top with the green onion greens, cilantro, chopped peanuts, a wedge of lime, and fresh bean sprouts.
