Camping Recipe: Campfire Grilled Corn

Ingredients

  • 8 ears yellow corn, in the husk
  • Salt, for serving
  • 6 tbsp. salted butter
  • 1 garlic clove
  • 2 tbsp. chives
  • 1/4 tsp. ground paprika
  • 1/4 tsp. ground black pepper

Instructions:

  1. Start by building a strong fire or heating your grill to around 450 or 500. You will want to cook your corn on high heat.
  2. To prepare the corn, shuck the layers down to the two layers just before the kernels. Carefully peel back the two layers to remove the silks from the corn, then re-fold the pieces back to cover the corn leaving some open space.
  3. You will want to place the corn directly on the grill over high heat and cook for around five minutes. Rotate the corn by 1/4 turn and then cook for another five minutes. Then repeat until the entire corn has cooked on all sides. That should take about 20 minutes of cooking time.
  4. You will know when the corn is done because it will be bright yellow and beautifully browned in certain spots with nice grill marks.
  5. In a small bowl, combine softened butter, one clove of chopped garlic, 2 tablespoons of chopped chives, 4th teaspoon of ground paprika, and 1/4 teaspoon of ground black pepper. Mashed together and stir with a fork in till combined completely.
  6. Once you remove the corn from the grill, carefully peel back the chard husks and spread the garlic chive butter over the kernels, then sprinkle with salt and serve.
